I’m not completely giving up my vegan lush identity, just gently folding it into the batter of this new bloggie (yep, I just made a baking metaphor). So, here’s a simple and yummy dish I made recently. Turns out Okra is not as much of a pain in the booty as everyone would have you think. We cooked these up by simply slicing them crosswise into thin little circles, then frying them in a cast iron skillet with a tiny bit of olive oil over high heat with a little S&P. This only takes a few minutes and then you have delicious, crispy nutty okra!
To go along with it, we made a rice pilafy thing, starting with a mirepoix (2 onion: 1 carrot: 1 celery), then adding the rice, broth and some paprika and chile powder.
Finally, we sautéed some seitan with gypsy peppers and 1849 BBQ sauce. This stuff is amazing. Just because you’re not eating meat, doesn’t mean you can’t enjoy the wonder that is rich, dark spicy barbecue sauce! Et voila; a southernish feast!
